Best-Ever Banana Muffins

1 egg
1 1/2 cups mashed ripe banana ( 3 or 4 large)
1/2 cup butter, melted
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Preheat oven to 375 F. Grease a 12-cup muffin tin or line with paper liners.

Beat egg, mashed banana and melted butter in a large bowl until thoroughly blended.

Combine flour, sugar, baking powder, baking soda and salt. Add to banana mixture and stir just until moistened. Spoon batter into prepared muffin pan.

Bake for 20 to 25 minutes or until tops spring back when lightly touched. Makes 12 muffins.

Variations:

Add 1 cup fresh or frozen cranberries or blueberries to the batter.

Add 3/4 cup semi-sweet chocolate chips to the batter.

    Hello,
    thank you for the recipe.
    The first batch of muffins I used 3/4 of a cup of sugar and that is too much.
    I used 1/4 cup of Splenda and 1/4 cup of sugar for the second batch.
    That was better..
    Perhaps it is the taste what matters..

  4. Hello, Thank you for the recipe. I made some changes I use 1/2 cup grind oatmeal(flour)1/2 whole wheat flour & 1/2 all purpose I also included 2 Tbsp of wheat germ and brown sugar for the sugar. I wanted them to be healthier and they were yummy and you can't just have one that is how good they are!!!!!

    Hi! I followed the recipe to a tee, using 4 banana (2 small, 2 large) The smell of them when cooking was just too much - the taste.....amazing....Love the texture and the colour...thank you for sharing this recipe that I will be making again and again!

    I'm going to try this recipe with pieces of pecan, white vanilla cake mix with regular flour, brown sugar and chia seeds. It's my first time baking as I'm more of a cook. Wish me luck!

    I've made this recipe as is many times. No need for adjustments because it great the way it is. Always turn out perfectly.
