Fruit Filled Oatmeal Bars

When I was looking through my pantry the other day, I saw a big bag of raisins that were just asking to be made into something yummy. I looked at the oats and they were whispering the same thing so I grabbed the Christmas Cookies magazine I've had since 2000 and immediately flipped to the Fruit-Filled Oatmeal Bars recipe. This is the type of recipe where there are 4 different filling variations and one happened to be raisin so I got to work.

The recipe itself if not hard to prepare. First you make a oat crumble and the filling is made on the stove. Two changes that I made was to use orange juice instead of water in the filling and I added a dash of cinnamon to the oat mixture. This added some extra flavour to the finished bar that was very pleasing. The bar was just sweet enough with a good balance of oats to raisins. This is a recipe I'll always have on standby - It's perfect when you want something quick without having to spend a lot of time in the kitchen to prepare it.

    YUM!!! I love all things with oat and fruit fillings. This looks like a nice change from the typical "preserves" filling. Can't wait to try it! Thanks.

    What are some of the other fruit fillings the recipe gave? Strawberry would be awesome - is it the same method no matter the type of fruit?

  4. I tried them out over the weekend, and they are wonderful with the raisins. They make a great snack in lunches, or just because. This will be a favorite, I'm sure!

  5. I made something very similar to this recently, but with a cranberry fillinf. It tasted great. However, it was too crumbly, I felt I did something wrong but I follwed the recipe exactly. Should I leave it to cool longer before I cut it into bars? The oats didn't seem to all stick together. I was thinking about adding syrup or honey next time before I spread it out on the pan. Would that be a good idea?

  6. Hi Christine - Maybe next time you could use some more butter to hold the oats together. A friend of mine finds that melting the butter instead of cutting it in helps for even distribution. Also, bars will cut much more cleanly if left to cool for a while. Hope this helps!!
