Chewy Peanut Butter Chocolate Chip Cookies

After the last week of hot hot heat, it has cooled down enough to actually think of turning on the oven. Today is absolutely beautiful - blue skies, light breeze and sunshine. I had a request for peanut butter cookies and I wanted to try a recipe that was completely new. The ones I've tried before are good enough but not great enough to not have a look around.

Out came Great Canadian Cookies and I flipped and flipped until I ended up at Chewy Peanut Butter Chocolate Chip cookies. It was submitted from Kanata, Ontario and the little blurb said, "These are the best cookies anyone has ever tasted." Well that's high praise indeed, so I set out to see if it was true or not.

About an hour later they were done and delicious. I'm not joking - the cookies were substantial and did not flatten out at all. The batter was a dream to work with and they kept their shape and tasted great even though I left out some sugar and used natural peanut butter. MiltonMama said these were probably the best peanut butter cookies ever and she would know, Cookie Queen that she is.

    It's cooled down here on the Prairies too...Ive been in baking mode for the past two days...great to be in the kitchen again without melting!!!

    Oh wow, now I'm SO hungry. So hoping the repair folks come early this morning to deal with our air conditioning so we can cook again. =} At least we have an excuse to make cookies soon since we promised to make some for a barbecue in a couple of weeks!

    Thanks for your wonderful recipes. I really want to bake these cookies but don't have corn syrup here. Can I replace it with maple syrup?

    Anon - I don't think there is an exact replacement for corn syrup. The only thing that mimics its consistency is honey. I can send you a bottle of corn syrup - if you're interested, just e-mail me. :) Thnaks for reading!

    Hello again Canadian Baker,

    Thank you very much for your offer on sending me a bottle of corn syrup. But the mailing fee will cost a lot more than the syrup itself (I live in Bangkok, Thailand). The thing is I rarely use corn syrup in baking so I try to find a substitute.

    Honey sounds good. I will try it this weekend and let you know how it goes.

  10. I just made these cookies for a dinner on Monday night. My husband tasted one and yelled out "MMMM", they are so geewy and soft.
    The batter tastes pretty good too :)

    LIGHT CORN SYRUP SUBSTITUTE

    2 c. white sugar
    3/4 c. water
    1/4 tsp. cream of tartar
    Dash of salt

    Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often.
    Cool syrup and store in a covered container at room temperature. It will keep for about 2 months. Makes almost 2 cups.
