Old Dad's Oatmeal Cookies

1 cup Butter Flavour Crisco all vegetable shortening or 1 Butter Flavour Crisco stick
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 eggs
1 tsp vanilla extract
1 tsp maple flavour or extract
2 1/2 cups quick oats
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Heat oven to 350 F. Grease baking sheet with Crisco or line with parchment paper.

Combine Crisco, granulated sugar, brown sugar, eggs, vanilla and maple flavour in large bowl. Beat at medium speed of electric mixer until well blended.

Combine oats, flour, baking soda, baking powder and salt. Add to creamed mixture at low speed. Beat until blended. Increase speed to medium. Beat for 2 minutes. Shape dough into 1 1/4-inch balls. Place 2 inches apart on greased baking sheet.

Bake at 350 F for 12 minutes or just until beginning to brown and just set. Remove to cooling rack. Makes 4 dozen cookies.

Note: I added cinnamon and real maple syrup to the cookies and did not use maple extract.

This sounds great! I've been looking for an oatmeal recipe! Quick question though...can I replace the crisco with butter or margerine?

Hi Yosha - Yes, you can replace the Crisco with 1 cup of butter. :)

How much maple syrup did you use please?

Margaret - I'm not sure how much I used as I just poured it straight into the batter. I think it was at least 2 tablespoons though. Hope this helps. :)
