1 cup salted butter, softened to room temperature
1 cup white sugar
1 cup brown sugar
2 large eggs
1 tsp pure vanilla extract
2 cup all-purpose flour
2 cups oatmeal, blended into a fine powder*
1/2 tsp salt
1 tsp each baking powder and baking soda
2 cup semisweet chocolate chips
1/2 cup grated bittersweet chocolate
Preheat oven to 375 F. Cream butter and both sugars until light and fluffy. Add eggs and vanilla. In a separate bowl, mix together the flour, oatmeal, salt, baking powder and baking soda. Add this to the butter mixture. Stir to blend. Add chocolate chips and grated chocolate. Stir to distribute evenly.
Roll batter into balls and place 5 cm apart on a cookie sheet. Bake for 10 minutes. Makes 30 large or 50 medium-sized cookies.
*To get blended oatmeal, place quick-cooking oats in a blender or food processor. The blended amount needs to equal 2 cups so you will need a little more than 2 cups to start.

I keep ONE chocolate chip cookie recipe in my stash, and this is it. They are the BEST chocolate chip cookies ever. Easy to make (I have a batch in the oven right now - they're going to a construction site in downtown Toronto tomorrow for my son and his workmates :D), and DELICIOUS. Simply sensational is no misnomer - these are GREAT!
These were so fantastic. I will be making these for the rest of my life.
