Apple Snacking Cake

1 cup packed dried apples or raisins
1/2 cup butter, softened
2/3 cup packed brown sugar
2 eggs
3/4 cup unsweetened applesauce
2 tsp vanilla
2 cups all-purpose flour
1 tsp each cinnamon and ginger
1/2 tsp each baking powder and baking soda
1/4 tsp salt
1/2 cup yogurt

Streusel:

1/2 cup chopped pecans
1/4 cup packed brown sugar
2 tbsp all-purpose flour
1 tbsp butter, melted

Streusel: In small bowl, combine pecans, brown sugar and flour; drizzle with butter, tossing with fork until moistened. Set aside.

With kitchen scissors, cut apples into pieces; set aside. In bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time. Beat in applesauce and vanilla.

In separate bowl, stir together flour, cinnamon, ginger, baking powder, baking soda and salt; add to butter mixture alternately with yogurt, making 3 additions of dry ingredients and 2 of yogurt. Stir in apple pieces.

Pour batter into greased 9-inch (2.5L) square cake pan, smoothing top. Sprinkle with streusel. Bake in centre of 350 F oven for about 35 minutes or until cake tester inserted in centre comes out clean. Let cool in pan on rack. Makes 12 servings.
